Masala Egg Muffins

Ingredients

Adjust Servings
10 eggs
Salt and pepper
1tsp turmeric powder
1tsp Coriander powder
11/2 tsp garam masala
2 onions finely chopped
3 green chillies finely chopped
2 tomatoes finely chopped
6 spring onions, finely chopped (optional)
1 red pepper cut in thin strips
Handful of chopped coriander leaves
Muffin tray 10 holes
Oil for basting the tray

Directions

1.

Pre-heat the oven to 180 degrees C.

Take a brush and baste the muffin tray with oil.

Mark as complete
3.

Whisk the eggs well. Add the salt and spices listed under the egg mix

Mark as complete
4.

Mix all the vegetables listed under the masala mix

Mark as complete
5.

Divide the vegetable mix equally and put it all the holes in the tray. Spread it on the base of each muffin hole

6.

Pour the egg mix into each of the muffin moulds

Mark as complete
7.

Top the mix with strips of red pepper and coriander leaves

Mark as complete
8.

Bake the muffins in the oven for 20 minutes

9.

Serve hot or cold
