Avocado, grapefruit and tandoori masala cashew salad

This is a vibrant, zesty salad with a touch of spice. This is oozing with wellness and well make you dance with joy with its zingy flavours.

Ingredients

Adjust Servings
100gms rocket leaves
2 large red /pink grapefruit you can use oranges instead
2 large avocados
100gms cashews
1tbsp tandoori masala powder
1tbsp Oil
Handful of coriander leaves for garnishing
For the chaat masala vinaigrette
3tbsp olive oil
2tbsp orange juice
1tbsp clear honey
1tsp water
1/2tsp chaat masala
Salt to taste

Directions

1.

Hear the oil in a small pan, add the tandoori masala powder and toss the cashewnuts to coat them properly with the masala
Mark as complete

Lay the rocket leaves on a platter

Peel the grapefruit /oranges and cut them in segments

Peel and cut the avocado in small chunks

Combine the ingredients for the dressing

Add the grapefruit/oranges and avocados on the platter

Now scatter the tandoori cashenuts

Drizzle the dressing over the salad ; sprinkle the coriander leaves
