Tangy mango and pineapple salad with a chilli and mint dressing

Adjust Servings
2large Mangos Chopped in Big Chunks (South American, dark green variety)
1tin Pineapple Chunks or Fresh Pineapple
1 Red Onion Finely Sliced
1 Green Chillies Finely Chopped
1 Handful of Mint Leaves Chopped
1 Small Packet Rocket Leaves
1tbsp Crushed Ginger
3tbsp Olive Oil
1 Whole Limed Juiced
Salt and Pepper



Mix all the salad ingredients.
Mark as complete

Make the dressing and add to the salad.
Mark as complete

Serve on a bed of rocket leaves.
Mark as complete

Chill for 15 minutes before serving.
Mark as complete
