Avocado, grapefruit and tandoori masala cashew salad

100gms rocket leaves | |
2 large red /pink grapefruit you can use oranges instead | |
2 large avocados | |
100gms cashews | |
1tbsp tandoori masala powder | |
1tbsp Oil | |
Handful of coriander leaves for garnishing | |
For the chaat masala vinaigrette | |
3tbsp olive oil | |
2tbsp orange juice | |
1tbsp clear honey | |
1tsp water | |
1/2tsp chaat masala | |
Salt to taste |
Directions
1.
Hear the oil in a small pan, add the tandoori masala powder and toss the cashewnuts to coat them properly with the masala

Lay the rocket leaves on a platter

Peel the grapefruit /oranges and cut them in segments

Peel and cut the avocado in small chunks

Combine the ingredients for the dressing
