2large Mangos Chopped in Big Chunks (South American, dark green variety) | |
1tin Pineapple Chunks or Fresh Pineapple | |
1 Red Onion Finely Sliced | |
1 Green Chillies Finely Chopped | |
1 Handful of Mint Leaves Chopped | |
1 Small Packet Rocket Leaves |
Dressing
1tbsp Crushed Ginger | |
3tbsp Olive Oil | |
1 Whole Limed Juiced | |
Salt and Pepper |
Directions
1.
Mix all the salad ingredients.
Mark as complete
2.
Make the dressing and add to the salad.
Mark as complete
3.
Serve on a bed of rocket leaves.
Mark as complete
4.
Chill for 15 minutes before serving.
